O-Ring v New Sculpt Era v Modern Era

Most of us are probably familiar with the vintage o-ring style construction of Joe Figures where you take out one back screw and a couple leg screws and you have a head, front piece, back piece, waist piece with easily broken front piece, 6 pieces for the legs and two arms ready to be put back together in some crazy combination. But how easy are the Early 2000 New Sculpt Era (what years really define that era) and the 2007 to present Modern era to really take apart and customize. For instance if you wanted to swap out the arms on a figure fr different arms and it's ME how would you do it.
